Housed within a historic building dating back to 1761, NASHI embraces the character of its past.

Inspired by the Japanese art of Kintsugi, imperfections are not hidden but thoughtfully highlighted. Golden lines run through the Thuringian slate, uniting Japanese aesthetics with regional craftsmanship.

“For over 20 years, I have dedicated myself to Japanese cuisine, and especially to the art of sushi.”

My journey took me from Thuringia, through a small mountain village in Japan, all the way to Vienna – where I was appointed Sushi Master.

Today I am back in my hometown Erfurt to create a place with NASHI that unites my experience, attitude, and passion.
